CIEH Level 3 Award in Supervising Food Safety in Catering

Course Overview
A course which provides a thorough understanding of food safety procedures in catering businesses, with an emphasis on the importance of monitoring staff and controls . This aims to provide managers and supervisors the extra confidence together with the knowledge to follow all new National Occupational Standard guidelines.
Prerequisite: Recommended understanding and knowledge of basic food hygiene – ideally the CIEH Level 2 Award in Food Safety taken within the last three years.
Course Content
- Understanding food safety procedure terminology
- Awareness of UK and European food safety legislation
- Understanding the concept of contamination it’s risks and prevention through good hygiene practices
- Temperature control and its role in food safety
- Pest control
- Benefits of workplace and equipment design
- Importance of waste disposal, cleaning and disinfection
- Principles of HACCP
- Food Safety Management tools
Course structure and duration
A 3 day course (18 hours) which includes lectures enhanced by video and written materials. Delegates are encouraged to actively participate in discussion sessions and group activities.
Assessment
A paper consisting of 60 multiple choice questions under examination conditions. 40 or more correct answers mark a pass.
Examination and certification is Issued by the Chartered Institute of Environmental Health

Candidates who have already achieved the CIEH Level 3 Award in Implementing Food Safety Management Procedures need only attend two of the remaining units of training and pass the multiple choice question examination to gain this award.
